Lemons are amazing, which is a long overdue statement from me. I used to hate lemons when I was younger. My grandparents have had a giant lemon tree in the backyard since before I was born, and like true Southerners they took advantage of the fact that we grew our own supply. We had fresh lemonade all summer, lemon ice cubes in the freezer, and jars of lemon juice in the fridge. I remember we’d send home neighbors, cousins, friends, with bags of lemons. It was all I ever knew, and I took it for granted. When I’d get sick, my mom would make me drink warm lemon water to soothe my throat and I hated it. Unless lemons were mixed with tons of sugar and water I wanted nothing to do with them.
Well, that’s changed!

I use almond oil and lemon juice as dressing for my salads

TIP: Fresh juice is always best, so you can get the most nutrients and lemons are relatively cheap year-round so it comes in handy to always have a few on hand and cut them when you are ready to use them
